On any map which has enough room, I try to build this trade center out of warehouses and grainaries. The idea is to streamline trade while also making it easy to tell how my economy is doing.

Most of the buildings are set to gather one particular item and refuse delivery of all others.

The row along the highway has finished products, which are usually the ones you are trying to sell. Next to each of these, in the other row, are the corresponding resources - timber next to furniture, olives next to olive oil, etc.

Each of the four granaries specializes in one of the four foods in the game - wheat, vegetables, fruit and meat.

The white warehouse is full of marble, which is used only as a building material for larger buildings.

Finally, there is one more warehouse set aside for a Trade Center. This is the first warehouse a caravan will visit. I set it to accept anything I am importing, and refuse everything else. Cart pushers will then move the materials to the main warehouses, while the caravan is free to proceed to the products they wish to buy.

At a single glance, I can tell that my city is producing just enough marble to keep the warehouse full, has far too many weapons workshops and needs more pottery workshops. Since I know which grainary is which, I can also tell that I need more wheat farms and less meat.

If this city had any docks, I would try to build this as close as possible to the docks. Since this city has none, I build this right next to the spot where the caravans enter the city.

If you use this idea, you still need to put grainaries and warehouses next to your markets, or the market lady won't find them. Just make sure you set those ones to refuse everthing but what you want to have available in the nearest markets, or you may find your markets have nothing to sell but iron and timber.
